Tomato & Spinach Pasta(diabolical_sin)
Great easy meal! Just add a small salad and some garlic bread.
1-1 lb. box penne rigate pasta, uncooked
1 lb. mild Italian sausage
6 oz. fresh baby spinach leaves
1-14.5 oz. can Italian tomatoes, diced
1.5 c. mozzarella cheese, shredded
.75 c. Parmesan cheese, grated
Cook pasta according to package directions.
Crumble sausage into a deep skillet over medium-high heat until cooked through, stirring occasionally; drain.
Add spinach and tomatoes; stir until spinach is slightly wilted.
Drain pasta; place in a large bowl. Add meat mixture and cheeses; toss and serve warm.
